|Welly Cask Fest - September 10th & 11th, 2016: Casks, Food Trucks, Live Music, and more! |
After the success of last year's THIRTY Cask Festival, Wellington Brewery will be hosting another cask festival this September. Welly Cask Fest will bring craft beer fans together to raise a glass and celebrate the rich history of cask beer in Ontario.
On the weekend of September 10th and 11th 2016, Wellington Brewery will host a two-day cask beer festival outside under large tents in the parking lot at the brewery. The weekend festivities will feature 25+ cask beers and ciders, food trucks, and live music. Each session will showcase unique Welly One-Off casks and collaboration beers alongside a well-curated selection of guest casks from Ontario Craft Brewers and cider makers.
Wellington Brewery was one of the first modern brewers in North America to produce traditional cask-conditioned ales which are unfiltered, unpasteurized, and naturally carbonated. Welly Cask Fest is an opportunity to celebrate all things cask while sampling some traditional styles of beer alongside a selection of unique small-batch brews and ciders.
Welly Cask Fest will also mark the brewery's 31st birthday and will coincide with the completion of a major expansion which has been ongoing over the past year and a half. The event will include guided tours of the brewery expansion with the first open to the public look at their new 40 HL brew house and world-class packaging line.
"It's been a challenging year for us at the brewery with a lot of changes but we're optimistic about the future and looking forward to bringing together our friends, family, and craft beer drinkers to celebrate" says Wellington Brewery Vice-President Brent Davies.
Welly Cask Fest will feature 3 sessions: two sessions on Saturday, September 10th, 2016 and one session on Sunday, September 11th, 2016. Tickets for each session are $20 + service charge and are available now via Ticketfly. Each ticket includes an 8oz sampling glass, 4 x 4oz drink tokens, and local shuttle bus transportation.
A portion of the proceeds from Welly Cask Fest will go to support the Children's Foundation of Guelph and Wellington. Further details about the event including performers, cask lineup, and more will be announced in the coming weeks. Tickets and more details are available at www.wellycaskfest.com
|Against the Currant Blackcurrant Kettle Sour Collaboration Beer Available at LCBO |
Wellington Brewery is excited to announce details about a unique summer seasonal brewed in collaboration with Escarpment Laboratories. Against the Currant is a refreshing and tart kettle sour beer brewed with local Ontario blackcurrants. After taking home a Bronze Medal in the Fruit Beer Category at the Ontario Brewing Awards this April, Against the Currant will be available as a summer seasonal at the LCBO and brewery.
Against the Currant - Blackcurrant Kettle Sour (5.5% alc./vol.)
$7.95 / 750 mL - LCBO #466326
Working with our friends at Escarpment Laboratories we used a simple kettle sour process to create a tart and refreshing sour beer. Kettle Souring lowers the pH of the beer by adding lactobacillus into the brew kettle which produces natural lactic acid. When the appropriate sourness is achieved, the kettle is brought to a boil killing any living lactobacillus, leaving behind a distinctly sour beer with notes of lemon and honey.
To round out this unique beer we added local Ontario blackcurrants which contribute a purple hue, earthy berry notes, and a tart finish to this tasty summertime beer!
For the past few years, Wellington Brewery has shared their lab space at the brewery with the young entrepreneurs behind Escarpment Laboratories, a start-up company providing brewers with Ontario’s first local source for brewers’ yeast. After a number of small one-off collaboration beers and pilot batces, it seemed inevitable that the brewers at Wellington and the yeast experts from Escarpment would team up to create a larger seasonal release.
“We tossed around a few ideas, we knew that we wanted to do a kettle sour rather than a traditional style beer like a berliner weisse or gose, and using a local Ontario fruit seemed like a natural fit” says Wellington brewmaster Marvin Dyck. “Working with the guys at Escarpment has been great, they’ve helped us manage and maintain our yeast while we’ve been able to provide them with a space to grow”.
The results of this collaboration, Against the Currant, will be available starting on Thursday July 7th at the Wellington Brewery retail store and on the shelves at select LCBO locations this week for $7.95 / 750 mL bottle.

|Kickin’ Back Dry-Hopped Session Ale Now Available Year-Round |
One of Wellington Brewery's most popular small-batch seasonal beers, Kickin' Back Dry-Hopped Session Ale will now be available year-round as part of the brewery's core brand lineup.
Kickin’ Back is dry-hopped with locally grown Ontario hops from Clear Valley Hops in Nottawa, Ontario. Wellington brewmaster Marvin Dyck worked closely with local hop producers to select unique hop varieties that would contribute floral, citrus, and lemon hop notes to this beer.
“Ontario hops are some of the best in the world, and working with local producers we are able to source fresh hop varieties which contribute the most aroma and flavour” says Wellington brewmaster Marvin Dyck.
As session ales have become increasingly popular over the past few years, our brewers have made this recipe distinct in the session ale category by enhancing the biscuit malt notes to achieve a balanced malt body that enhances the aromatic citrus and floral hop notes. This laid back pale ale is low in alcohol with a well-balanced bitterness making it the perfect beer to enjoy all day long.
Kickin’ Back was first released in spring 2015 as part of the Welly One-Off Series and it quickly became a fan favourite, selling out in record time at the brewery, and taking home a Bronze Medal in the Session Ale category at the 2015 Canadian Brewing Awards.
Now in 2016, this award-winning session ale is back to stay. Kickin’ Back will be available year-round in 473 mL tall cans at select LCBO locations and grocery stores starting this week for $2.95 / 473 mL tall can. It will also be available on tap at bars and restaurants across Ontario and at Beer Store locations starting in June.
With a focus on keeping it local, the Kickin’ Back can features an illustration by renowned Guelph-based illustrator Nick Craine. Now you can Kick Back any time and enjoy this dry-hopped pale ale featuring the unique aroma and bright hop flavours of locally grown Ontario hops.

For the third year running, Queen of Craft will happen every Friday in March at various downtown Guelph locations. The program is designed for women and brings some of craft beer's most influential speakers to our city to discuss various concepts in beer, brewing and the industry. With proceeds going directly to Guelph-Wellington Women-In-Crisis, this program helps support the wellness of our community.
"Queen of Craft aims to provide women a positive environment to explore all facets of the craft beer industry in hopes to encourage interested participants to get involved in the scene," explains Wellington Brewery Event Coordinator, Karyn Boscariol. She adds, "It brings women together to learn, bond and appreciate the contributions women have made to beer culture over the centuries."
Queen of Craft 2016 will include prominent speakers, open discussions, live cooking demonstrations and a guide to host your own pairing party. The individual sessions will focus on woman-positive beer blogs, an education on the workings of yeast in beer, a culinary show-down using beer as the main ingredient and an exploration of pairing beer with cheese and chocolate. Participants who attend all four sessions will have a chance to be a part of our Queens Brew Team 2016. This team of eager women will come up with a recipe and then brew this beer on Wellington's pilot batch system. |SPA is the first beer in the world to have its ingredients DNA Barcoded! |
What makes our beer unique? It's not just the way we brew it, it's also our continually propagated strain of Wellington ale yeast. Wellington Brewery and the Biodiversity Institute of Ontario present: DNA SPA - "DNA Sequenced Pale Ale", the first beer in the world to have all of its ingredients DNA barcoded.
It's the same as your classic Wellington SPA - except that we DNA barcoded the ingredients! DNA barcoding is a tool used to identify species based upon a short region of their DNA called the "DNA barcode". We compared the DNA barcodes of Wellington SPA's ingredients against a reference library of millions of DNA barcodes which showed an exact match for both the hops and malt varieties used in this beer.
However - a special DNA barcode signature showed up in Wellington's strain of brewer's yeast. The yeast barcode has a 3 nucleotide insertions and 1 nucleotide deletion, which makes this particular strain of brewer's yeast unique in the reference database. This means there's been no other record of this yeast strain in the world. Allowing the strain to evolve in isolation, this unique barcode is the result of Wellington Brewery using the same strain of brewer's yeast for 30 years.
Enjoy a DNA SPA and celebrate the advances of DNA barcoding and biodiversity science with the Biodiversity Institute of Ontario during the 6th International Barcode of Life Conference hosted at the University of Guelph Aug 17-21.
A limited run of DNA-SPA labelled 473 mL tall cans will be available at the brewery while supplies last!
