Upside is our first widely available IPA that we launched in 2017. Before that, all of our IPA’s were only available as a series of rotating small-batch releases and seasonals. When we finally landed on the recipe for Upside, it was clear that we’d finally found that perfect juicy IPA that we wanted to revisit again and again.
Upside is a New-England style IPA that uses Vermont yeast and loads of dry-hopping to create a hazy IPA with massively juicy citrus notes. We use four different hop varieties: Citra, Cascade, Centennial, and Amarillo. Citra and Amarillo contribute the huge tropical fruit notes of grapefruit, peach, and mango while we use Ontario-grown Cascade for a hit of juicy orange and local Centennial hops for bittering. We intentionally have a touch more bitterness than some similar New England style IPA’s because we want that slightly bitter and refreshing hop kick on the finish.
To punch up those bright hop notes we ensure this beer has a creamy and smooth mouthfeel from the use of Vermont-style yeast and a malt bill including higher amounts of wheat and oats. The result is a hazy IPA that hits all the right notes with huge tropical hop character upfront and juicy citrus notes on the finish.
