A Circular Food Experience

It all comes down to community, it’s at the heart of food and drink culture and it’s what drives us to do better for people and the environment. With that community spirit in mind we’ve teamed up with some incredible local partners to launch North America’s first circular meal - a gourmet restaurant meal created entirely from waste.
It all starts with our spent grain leftover from brewing. “In the past we would send it to local farmers for livestock feed,” says Wellington Brewery President Brent Davies. “Working with Provision, we hit upon the idea that we can reuse it to feed people – a much better idea in the sense of circularity.”
We’ve partnered with local entrepreneurs to create a truly circular meal with our spent grain (and our beer) as a central part of the process. So how does it all work? Our spent grain is upcycled as feedstock to an insect farm that produces animal feed, which then goes to a trout farm to feed the fish. The insect and fish poop become natural fertilizer for potatoes. And some of the grain that the insects can’t take goes to a baker with waste yeast from a yeast lab to produce bread.
It’s an interconnected circular food system with a delicious result: A hot smoked steelhead trout on sourdough bread with potato chips and a pint of beer. A fully circular meal, served for an entire month by our friends at the Neighbourhood Group of restaurants.
“Working with Provision has opened our eyes,” says Davies. “From beer you get fish, bread and potatoes! There are not too many projects like this in the world and we are proud to be a part of it.”
This circular meal partnership is one of many projects underway as part of the Our Food Future initiative to help realize Guelph-Wellington’s joint vision of creating Canada’s first circular food economy. We’re proud to be working alongside 7 great local organizations to make this circular meal possible: Provision Coalition, Oreka Solutions, Izumi Aquaculture, Smoyd Potato Farms, Escarpment Labs, Grain Revolution & The Neighbourhood Group.
This fully circular meal will be served in 3 different versions for an entire month at The Wooly Pub, Park Grocery Deli & Bar and Miijidaa Café & Bistro starting on October 15th. Here’s the full menu:
