“Old Buddy” Chocolate Mousse Recipe

Are you looking for the perfect recipe to please everyone from Great Grandma to busy toddlers this holiday season? Our featured baker is Red Seal Certified Megan Ferraro of https://cellarbakery.com/ who has worked in numerous kitchens and bakeries in Guelph and now works in her own home bakery. This silky, decadent mousse is made with our very own "Old Buddy" Espresso Brown Ale to give it just a hint of coffee goodness.

Ingredients:
1⁄4 cup Old Buddy Espresso Brown Ale, cold and flat
210 g quality, dark chocolate, chopped
2 Tbsp butter
1 cup heavy (whipping) cream
1 tsp vanilla
3 egg whites
pinch salt
3 Tbsp granulated sugar
Procedure:
1. Melt the chocolate and butter together over a double-boiler. Set aside to cool to
just above room temperature.
2. Whip the cream until soft peaks form. Fold the Old Buddy into the whipped
cream using a spatula.
3. Using a stand mixer or hand mixer, whip the egg whites and salt on high speed
until foamy. Gradually add sugar until soft peaks form.
4. Fold the whipped cream into the chocolate mixture in three parts.
5. Fold egg whites into mixture in one addition.
6. Pour/scoop mousse into prepared serving dishes and refrigerate, uncovered,
around 2-3 hours.
7. Top with whipped cream or chocolate shavings.
