Special Pale Ale candied Nuts recipe 

These crunchy, sweet, and salty Special Pale Ale peanuts are a fun and tasty twist on a classic beer pairing treat. The slight grainy sweetness and bitter flavour from the beer reduction plays beautifully with the brown sugar and flaky sea salt. Try adding some spices in for a bit of heat or switch out peanuts for almonds or even cashews. Serve this with a cool, frothy pint of Special Pale Ale or atop some vanilla ice cream as a unique desert. 

If you have extra, The beer reduction can also be set aside and stored for a few days in the fridge. This is great in a simple syrup for cocktails or to add some sweetness to a marinade or BBQ sauce. 

 

Ingredients: 

-2 cups of blanched peanuts

-3/4 cups brown sugar

-1/2 cups Special Pale Ale reduction (1 can)

-flaky sea salt

Directions:

  1. In a pot on the stove, add the Can of Special Pale Ale and reduce until roughly 1/2 a cup remains (1-1.5 hours on medium Heat), occasionally skimming any from that forms on the top. It should be dark brown, bitter, and fragrant. Set aside.
  2. In a large saucepan on medium-high heat add the peanuts, sugar, and beer reduction. Stir the peanuts until a syrup forms.
  3. Reduce to low heat and continue to stir and fold the peanuts until the syrup has coated them entirely and strings of candy begin to form.
  4. Pour the peanuts onto parchment paper to cool, and salt them immediately. Allow to cool completely and break apart the peanuts into smaller pieces as they cool.
