Upside IPA cheese pairings

It’s summertime, and the living is easy! Hazy IPAs pair beautifully with summertime dishes and outdoor get-togethers. There’s nothing like a cold IPA and an easy-to-make charcuterie board to compliment a summer day. Traditionally, hazy IPAs are paired with aged cheddars like the Cows Creamery 3 year old cheddar. The sweet cream in the cheddar match the grapefruit, peach, and tropical notes in this New England style IPA. The bold, sharp finish in old cheddar compliments this resinous hoppy finish, allowing the vibrant dry-hop flavours to shine like the sun!
We also love to pair Upside IPA with Gouda Gold from Mountain Oak Cheese in New Hamburg, Ontario. Aged for a minimum of 18 months, this cheese showcases rich butterscotch and caramel flavours, followed by a sharp and salty finish. A slight crunchiness is created by tysosines (proteins coming together in the milk) aka cheese diamonds. The subtly sweet bourbon and salty caramel notes in the cheese elevate the juicy stone fruit, guava and grapefruit flavours in the beer. The sharp finish in the cheese tones down, but compliments, the resinous hop profile of the brew. Upside IPA's soft, creamy mouthfeel is also echoed in the creamy mouthfeel of the cheese. Gouda Gold also pairs perfectly with cured meats, making it the ideal charcuterie board candidate. Add some Jewels Under the Kilt Maple Mojito Pecans from Fergus, Ontario and you’ve got the beginning of the ultimate picnic lunch. Sweet maple syrup and toasted, locally grown pecans with a citrusy lime jalapeno heat make the Upside IPA and Gouda sing in harmony!
This juice bomb of a beer is perfect for cutting through spicy foods, like the Seed to Sauasge Chorizo, found on the Charcuterie Board available in the brewery tap room. The juicy qualities of the beer cut the fattiness in this traditionally-cured Spanish sausage, while fanning the flames of the chilis. The hoppy bitter finish in the beer is tamed, and the delicate heat is amplified to create a uniquely divine sweet heat combination.
