Getting together with friends and family this season? Our Wellington Bootique Mixer has something for everyone to enjoy! It’s the perfect mix six pack that features three year-round favourites alongside three tasty small-batch seasonal beers. 

We put a lot of thought into the beer lineup for our seasonal mix packs and this one really has a bit of everything - a few lagers, a chai latte flavoured stout, a hazy IPA, an English-style pale ale, and a Sour Raspberry IPA. So let’s dig a bit deeper into what’s behind these beers, what you can expect from them, and what food pairings you can try to create some bold and exciting flavour combinations.

Shubie Sour Raspberry IPA was first released in the summer of 2018 and since then this tasty sour IPA has become a fan-favourite that’s been re-released many times to satisfy demand. This one-of-a-kind beer has it all, with juicy hop flavours upfront, tart sour notes, and a tidal wave of fresh raspberries. The raspberries give the beer a beautiful ruby pink hue and those tart raspberry and sour notes are super refreshing. Normally we’d call this the perfect summer beer but with a beer this tasty, it’s a crime to keep limit this to a summer release, so we’ve made it available this fall and winter in our Bootique Mixer.

Shubie is a must-try with a semi-firm Goat’s Milk Cheese and a sweet, fruity cheese jelly. Tart & sour raspberry notes in the beer complement the tangy creamy cheese and the jelly brings it all together. We especially love the Shubie with River’s Edge Goat Dairy’s Farmstead Pellets on Pasture & Lavender Jelly from Baroque Botanicals Farm.

There’s nothing like our Fine Italian Pilsner to satisfy that craving for a crisp and super refreshing pilsner. And what’s so fine about it? Our Italian-style Pilsner has bold aromatics from the loads of Hallertau Mittelfrüh and Saphir hops. It's hopped at a cold temperature and dry-hopped for less bitterness and more fruity, floral aromas. It's the quintessential pilsner, more drinkable, more crushable and more interesting. 


Try this easy-drinking brew with an authentic Italian antipasto plate or with a thin crust pepperoni pizza topped with fresh basil. The clean yeast notes in this beer are perfect with an Italian thin crust pizza, while the salty pepperoni and gooey cheese are a classic with this crisp and crushable pilsner. The fruity and floral flavours from the hops pair perfectly with fresh herbaceous basil to bring this classic pairing to life!

And what mix pack is complete without a decadent stout? We dug way back into our small-batch history to revive our Spice Odyssey Chai Latte Stout collaboration with the Queen of Craft Crew. First created in 2014 by the Queen of Craft brew team as a holiday release, this unique stout has a creamy malt body with black tea and chai spices including cardamom, cinnamon, ginger, and cloves. It was such a winning combination that Spice Odyssey took home a Gold Medal at the 2015 Canadian Brewing Awards. Since then we’ve brought this beer back a few times and it’s been a seasonal favourite for us. And the best part is that this beer helps give back to the community with $0.25 from each can sold going to support Guelph-Wellington Women in Crisis. 

Our Head Brewer Jeff Wilson suggests pairing Spice Odyssey with a sweet and decadent Blondie with crunchy toasted pecans finished with a Cardamom-infused brown butter drizzle. It’s a decadent pairing that is the ultimate indulgence!

Bootique craft beer mix pack

Upside IPA is our first widely available IPA that launched in 2017 and has since become a year-round core brand. This New-England style IPA that uses Vermont yeast and loads of dry-hopping to create a hazy IPA with massively juicy citrus notes. We use four different hop varieties: Citra, Cascade, Centennial, and Amarillo. Citra and Amarillo contribute the huge tropical fruit notes of grapefruit, peach, and mango while we use Ontario-grown Cascade for a hit of juicy orange and local Centennial hops for bittering. 

Be sure to drink this one fresh and try pairing this beer with spicy, sweet, and sour Thai dishes. It's out-of-this-world paired with spicy green mango salad or Spicy Thai noodles. This IPA fans the flames at first, then cools them in the end. Sweet tropical fruits abound when paired with Mango salad and the bitterness in the hops amplies a salty, citrus, umami flavour found in Thai foods. Upside IPA is also wonderful paired with rich and creamy butter chicken or spicy, salty Spanish Chorizo. The pairing possibilities are endless with the Upside!

 

Crisp, refreshing, and smooth, Helles Lager is the perfect go-to beer. Inspired by traditional German light lagers, this award-winning Helles Lager is light gold in colour with a balanced malt sweetness and crisp noble hop finish. With a good Helles style beer, it’s all about balance and drinkability, the grainy-sweet malt character is in perfect balance with a restrained hop bitterness that leads into a soft, dry finish. It’s the kind of beer that pairs well with almost any food, especially seafood and BBQ, and is the ultimate refresher on a hot summer day.

We suggest pairing Helles Lager with rich shellfish like snow crab, buttery scallops or fresh briny oysters. The bubbles in the beer cut the richness in the seafood and the sweet malty undertones highlight the buttery sweetness of shellfish. It’s also delicious with fried calamari - the effervescent beer cleans the palate and does not interfere with the delicate flavours of the seafood.

 

Our Special Pale Ale, or SPA as it’s known to fans, is firmly rooted in the English tradition of bringing toasted malt and fruity yeast character to the forefront, balancing the hop bitterness. It makes for an approachable and smooth pint that’s deep copper in colour with notes of caramel and apricot on the nose, and a medium-bodied malt character with pronounced biscuit and caramel notes. We add our own twist to the classic English style by using some Ontario grown Cascade hops that add a subtle but satisfying citrus bitterness on the finish.

Pair Special Pale Ale with traditional British Pub foods, like Cornish Pasties and Meat Pies. It’s delightful when paired with Shepherd's Pie; the savory beef with rich sauce and sweet carrots highlight the creamy malt character in the beer, while the earthy mashed potatoes and herbs showcase the earthy floral hops. Or try this beer paired with fruity and tangy English cheddars, like the Red Leicester. The tanginess of the cheddar highlights the delicate hop profile, while the fruity sweetness of the cheese also showcases the biscuit notes and caramel malty sweetness.
